I don't know if Google adapts to individual voices over time (there doesn't seem to be a training ‘sentence’ as there is in Android voice to text), but on the whole it is surprisingly accurate, even with names of places etc. and sometimes you just have to type in the words you want, as some words/sounds are very similar to others.
